Producer tasting notes — on the nose: La Adelita Single Estate Blanco has pungent aromas of lime-juiced agave; on the palate: Tart, ripe, and sweet — lead to a zing of spiced vanilla bean on the tongue, with a warming effect that melts into a chocolate coating; finish: The spirit finishes with a wet-stone sensation, followed by a settling sweetness.

Serving & pairing

Sip blanco chilled or in a Margarita; reposado and añejo are best neat in a tulip glass. Pairs with ceviche, tacos al pastor and dark chocolate with chilli.

Blanco, reposado or añejo — which tequila should I buy?

Blanco (silver) is unaged and shows the freshest agave flavour — best for Margaritas and Palomas. Reposado (2–12 months in oak) adds light vanilla and works neat or in cocktails. Añejo (1–3 years) and extra añejo (3+ years) are rounder and oakier, best sipped neat.

Housewarming

Vodka that is not just vodka.

“A Polish wheat vodka, almost creamy. The country filter on Spirit Hives is a small thing and it is why I found it instead of grabbing the usual bottle.”

Tasting flight

Half bottles, five rums, one winner.

“The half-bottle shelf let me pour a flight without buying five full bottles. Guests voted. The winner is now a Spirit Hives regular on my shelf.”

Anniversary

Cognac for a quiet anniversary.

“Thirty years. No party, one glass each by the fire. The XO from Spirit Hives was warm, long and unhurried. That was the evening.”

Weekend sipping

Mezcal that tastes like a place.

“Smoke, not a campfire, with the village and the agave named on the page. I read it, then I drank it. Spirit Hives had both parts right.”
