About this bottle
A rum from Thailand, Chalong Bay Lunar Series #2 Rabbit 2023 New Vibrations Rum is part of the Spirit Hives spirits selection. It is bottled at 60.7% ABV, in a 700 ml bottle. Producer tasting notes — on the nose: Both fresh and heady. Restoring succulent sugarcane notes, the initial aroma is extremely fruity (pineapple, pear), milky (almond, rice), and vegetal (sugarcane). With aeration, scents of tuberose, geranium, and mustard seed gradually take over the olfactory space; on the palate: Elegant, dynamic. The palate’s initial impression is subtly vanilla, lemony, and herbal. Lithe, the mid-palate pours freshly pressed sugarcane juice onto the tongue. More substantial, the finish evokes fibrous and liqueur-like sugarcane; finish: Long, blossoming. Notes of vanilla, coconut milk, and aromatic plants (rosemary, sage) give way to gentle spices (cinnamon, grated ginger) and honeyed (agave) and indulgent (rice pudding) flavours.

Serving & pairing
White rum suits Daiquiris and Mojitos; aged rum deserves a neat pour. Pairs with jerk chicken, tropical fruit and banana desserts.
Does “dark rum” mean aged rum?
Not necessarily. Colour can come from oak ageing or from added caramel. Look for an age statement or the words “aged” or a year count; “Navy”, “Demerara” and “Jamaican” describe style and origin rather than age.
